I have never been a fan of granola until about a few months ago. When I think about granola, I think about those dry, boring, and bland granola bars my mom used to add to my lunch for school (sorry mama). I was just so sick of them, I'd end up throwing them out. It never really crossed my mind that granola can be so much more than that!
I needed a change to my "breakfast" routine (if I'd even call it breakfast.. I'm not really a breakfast person). Although high in calories, granola is a good source of fiber, protein, and other nutrients. But to give it that extra nutritional kick, it's very versatile to prepare.
What I used:
- Banana
- Organic honey
- Soy milk
- Granola oats with toasted coconut
You can add any fruits, nuts, or toppings you'd prefer. Banana was the only fresh topping I had on hand. Now that I've played around with store bought granola, I'm really interested to start preparing homemade batches. If you have any tips, let me know!
